1/2 pound boneless chicken pieces
1 tbsp. chopped or grated fresh ginger
1/2 onion, diced
1 large peeled onion
1 chili pepper
4 cups chicken stock
6 tbsp. smooth real peanut butter [unsalted unsweetened, pure peanut butter]
2 large tomatoes
Ground nuts are an important dietary staple in Ghana. Ground nut soup is perhaps the signature dish of Ghanaian cuisine. It is a hearty main course and very filling. The ground nut is really a legume. The ground nuts grow on the roots of the ground nut plant. To harvest the ground nuts, Ghanaian farmers pull up the plant and remove the ground nuts from the roots. In the United States, ground nuts are called peanuts
Cut chicken into small pieces and steam with ginger and diced onions.
Add whole peeled onion, chili pepper, and stock.
Boil for 25 minutes, or until onion is soft.
Add peanut butter.
Remove and discard whole onion and chili pepper.
Puree soup in food mill or blender with tomatoes, until a smooth paste is formed.
Simmer for a further 1/2 hour.
